Balsamic Berry Salad
Is there anything prettier than fresh fruit for a summer gathering? It's just gorgeous! It makes me really happy.
I love fruit. I could eat fruit all day, every day. But that's not particularly great for my blood sugar, so I try to find ways to add in some protein and healthy fats to balance things out. Hence the nuts, cheese, and olive oil in the dressing.
This is one of those "recipes" you can throw together quickly for unexpected dinner guests or a pretty party dish. The beauty of this salad is you can sub out any fruits, nuts, or cheese for whatever you have on hand. And that fresh basil can be switched out for cilantro or mint.
My only recommendation is to wait to add the balsamic vinaigrette until right before serving to keep it really fresh! And if you want to help out your digestion a bit, I would also add a drizzle of apple cider vinegar. Serve this with my Honey Basil Balsamic Vinaigrette and Balsamic Rosemary Chicken for a delicious lunch or light dinner. Enjoy!
Ingredients
- 2 cups cubed watermelon
- 1 pint blueberries
- 1 pint blackberries
- Fresh basil leaves cut into ribbons
- Handful of toasted pine nuts I toast mine in the oven at 300 degrees for about 5 minutes
- Goat cheese or Feta cheese crumbles
- Drizzle of balsamic vinegar or vinaigrette I use my Honey Basil Balsamic Vinaigrette!
